i've been seeing these recipes for pie pops here and there, and i just think they are the cutest...i'm a sucker for miniature, chocolate-covered, or on-a-stick types of food. i gathered the necessary items to create these tiny pies, but came up empty as far as the actual sticks (where is fort myers hiding these? the joanne's associates acted as if i were asking to see the pope...but they have an entire section dedicated to cakes, cake molds, decorative cooking, etc.). i almost scrapped the entire idea altogether and made a normal-sized pie (yawn) but then i thought--hey, they'll still be tiny--who really needs a stick getting in the way, anyway?
this is such a simple, simple baked good, and let me tell you--crowd pleaser! i think they would be excellent topped with ice cream or whipped cream (this batch didn't last long enough to get to that stage), you really can't go wrong. and, if you buy different pie fillings (or if you really want to go nuts and make them), it's pretty easy to please everyone in the fam with their favorite variety.
1 package of (usually includes 2 crusts) of pre-made pie crusts
1 can of pie filling (or as many as you like, if you're indecisive like me)1 cup of flour
tools: rolling pin, big cleared (clean) surface, glass, and a chop stick (or whatever)
